Eggplant Recipe -Indian style

Hey. This is a very basic Indian Eggplant (Baingan ki Sabzi) recipe which I often make and my little cherub and hubby love it.

Ingredients:

Small Eggplants-3

Potatoes-Peeled and washied-2

Turmeric powder-1/2 tsp

Salt-To taste

Green chillies: 1 or 2

Red chilli powder- 1/2 to 1 tsp or to your taste

Ginger garlic pate- 1 tbsp

chopped onions-2 medium

cummin seeds-1 tsp

Coriander powder-1/2 tsp

Cinnamom powder-1/2 tsp

Method:

Cut the eggplant into small cubes or bite size pieces.

Cut the potatoes into desired shape.

Heat 2 tbsp of oil in a pan. Add cummin seeds and let them splutter. Add chopped onions and green chillies. Stir until onions turn golden brown then add ginger-garlic paste.

Cook for a minute and then add all the spices except red chilli powder. Simmer for a minute and then add half a cup water. Let cook for five minutes and then add red chilli powder,eggplants.

cook covered for 12-14 minutes on medium heat. Then add potatoes and half cup water.

Cook until the potatoes are tender.

Serve hot with rice or bread.

I always skip the red and green chillies since my son doent like hot food.

My little cherub

Asanga is now seven month old,can’t believe time went by so fast.Last Christmas he was a four month old fetus exploring his mothers womb. And look! How big he looks now. I am already missing him being small.He was just a four ponder at birth and now he is 13 lb!! I know not too much for a seven month old but he is working his way up slowly.In no time he will crawling and running around. So there will be two kids in the house running around,and the baby.

I did not know baby’s bring so much joy to life.Everything changes. Your lifestyle,your schedule,your priorities. We have to work around his schedule and he decides what he wants and when he wants. Life has been pretty hectic juggling between work,study, and home.But in the end,I guess it’s all worth it. When I pick him up from his day care in the evening, I am nearly in tears when I see his innocent smile.Oh! It’s just awesome. It’s something to die for. I enjoy my ride home with him while husband has to drive.Thats the best part.
